Hey lovelies!

It has been a couple of weeks since my last update, and for that I do NOT apologize. :)

The holidays always manage to make me feel stressed, and blogging has to go to the back burner when I need to focus on friends, family, travel, and last but not least… myself. :)

Thought I’d give a quick update about our Holidays!

On Thursday, we got up bright and early, to drive to east texas, where my dad’s side of the family lives (Dad and Step Mom extrordinarre live in Tennessee). We picked up my little brother on the way, and made the journey to the east. It was awesome, we had a big breakfast and exchanged gifts including this beauty… Trust me, it is a long story… :)

We were watching the storm pass over our home, in DFW on the weather channel, and knew that we needed to get on the road if we wanted to get home safely.

We set off and got SO close, but just north of Frisco, they started closing off roads and people were sliding off everywhere because of the ice. We decided to detour to my grandparents house to get out of the “blizzard-like” conditions. We waited out the storm, but decided that we would try again to get home, as we had some plans for christmas morning, and wanted to get to our own beds.

Another hour + on the road, and eventually, we got home safe and sound.

We woke up on christmas morning, and I felt very jolly. I made some cinnamon/egg nog waffles for my hubby and brother… (don’t forget that your waffle iron needs non stick spray, or your first waffle could look like this:

Once I remembered that little nugget, my boys were happy. :D

We opened the few presents under the tree (as most were exchanged at other times and places) and I watched the parade and stared out my windows into our snow covered yard. :)

After breakfast, I got to have a christmas chat with my lola! The whole family was there, and she got to meet my brother clint, so it was pretty special for me. :)

Later that afternoon, we took my bro out to my grams house, where we had a DELISH dinner, and opened more presents. Grams and my great grandmother, aptly called “grandmother” made pies and potatoes, stuffing, and fruit salad. Yum.

Hey gang! Just a quick post tonight to talk about two recent runs that made me VERY happy. :D

1) On Thursday I’d been on day 3 of a GRUMPY streak and I was NOT feeling a workout at all… but then, the SUN came out…

 

oh…

And we needed bread.

 

Luckily, the grocery store is a super speedy 1 mile (almost exactly to the hundredth of a mile!) from our front door, and I figured a 2 mile jaunt would do me some good.

It was cold, but I bundled up ready to run.

About .25 into my run, I began to wonder how I was going to get that bread home… cradle the bag like a baby? Stuff it into my jacket? Swing the grocery sack at my side like a crazy person??

I was in and out of the store in about 2 minutes, and knew what I had to do, BREAD PAPOOSE!!

My bundle of joy and I were home lickity split, and I also set a new mile PR with my speediest mile yet, 9:55!

2) This afternoon (Sunday), I set out for a 4 mile run… I was a little anxious, cause it is the longest distance I’d attempted in a while, but I know that out and backs are my preferred method, so I planned a great 2 mile jaunt along a fairly busy street.

I felt like I was just in a zone… a true runner’s high. While I was driving past the cars on the road, I was actively and honestly GRINNING from ear to ear… I mean a huge KELSEY smile (and if you know me, you know that is a pretty huge smile) and I ended up running a great pace, and very strong and steady 4 miles. I finished in 44:12 for an 11:02 pace, and walked for half a mile afterwards to cool down.

Now I’m happily chilling in my recovery socks. :D

Another thing that I learned on this evening’s run is that while out and backs are my favorite method, I always go past my half way point… like, if my nike+ or garmin says, “half way point” I always go past that, at least a quarter mile or so, so that when I get back, There is no doubt that I’ll be DONE when I get back to my starting point/home… Few things annoy me more than wanting to do a 3 mile run, and getting to my front door at 2.98 miles and having to lap the cul-de-sac!! ARGH.

One of my bloggie besties, Nicci told me about these awesome crackers when we met for our blogger lunch/shopping trip, and I’m really excited that I was able to review them myself!

George from Dr. Kracker sent me a ton of items to try, including crisp flatbreats, culinary crisps, and snackers.

Review:

Dr. Kracker has beautiful packaging, which includes great graphics, and close up/clear shots of their chock-full-of-goodness crispies. The first item I tried was the Cherry Semolina Culinary Crisps and right away, I knew I was totally in love.

A snack lover already, I’ve eaten tons of chips, cookies, and crackers. These items are usually so stuffed with salt and sugar that my tastebuds don’t have any reason search for complex flavors or textures.

At first bite, I was taken aback by the lack of obvious salty or sugary coatings. That isn’t to say I missed it, mind you, because these boogers are REALLY tasty. I’m so excited that companies exist that are creating rich, complex, and flavorful snacks that are natural and bold in just the right ways.

I think my favorite Culinary Crisp was the Fire Roasted, because WOW. Brimming with black sesame seeds, sundried tomato, sweet potato, roasted peppers, and even a touch of cheese, these guys had my tex-mex-lovin-heart aflutter. :)

The flat bread was surprisingly good too. The pumpkin seed cheddar is my favorite. My husband said it best.

Wow… these taste like… well… exactly what it says it should taste like. Pumpkin seed and cheddar…Isn’t THAT a novel idea!?

Sure, the krackers were sent to me to try, free of charge, but I think you guys know me well enough to know that if I didn’t like them… I’d say so. These are great, and I’m really glad to have them in my healthy snack arsenal.

Today’s eats included a couple of adventurous options… (read: we are almost totally out of food)

I started the day with an emergency banana and a Doctor Kracker Pumpkin Seed and Cheddar flatbread… (looks yummy, doesn’t it? keep reading!) I topped this bad boy with a serving of whipped cream cheese which REALLY made me happy. 60 calories VERY well spent! :D

I also did something that I rarely do, which is drink about 250ish calories with breakfast in the form of 2 cups of fruit juice that is left over (and otherwise going to be wasted) from thanksgiving. I don’t drink a ton of juice, but I was thinking of getting starbucks, or a giant coke today, *GASP* and figured, at least fruit juice is a LITTLE bit better than that… I’ll just convince myself that that pulp made a dent in my fiber needs. :)

For lunch, I had my second random meal, since, again, we’re TOTALLY out of food. :)

I had a grown up lunchable, comprised of a few slices of deli turkey on top of 8 Doctor Kracker Cherry Semolina Culinary Crisps! (VERY YUM… think THOSE look yummy too?? just get ready!) I also ate that colby jack stick which makes that about a 250 calorie lunch to offset my over 500 calorie breakfast. :)

At about 3, I scarfed a clementine… and debated having the pictured banana, but didn’t… I got so busy with finishing up work, parent phone calls, and getting to the grocery store.

For dinner Daron and I caved and had Taco Bell… (At least I know @ChicRunner and @CNicRun won’t judge me… :D )

Tonight, I’m going to whittle my middle while watching BL.
