I wanted to make a quiche recipe that I found in last month’s Shape Magazine… (Which was AWESOME, by the way.) and it called for a simple refrigerated pie crust you can find in the cool case at any supermarket. They come in pairs, so I was going to have this extra pie crust, so instead of wasting it, I decided I was going to make an apple pie.

It’s autumn… What’s more awesome in the fall than apple pie!?

I ended up reading about half a dozen recipes, and combined ideas from several of them, but I knew I wanted one that had a sweet buttery strusel topping, and extra cinnamony apples.

 

The following is the recipe I used that ended up with my husband giving me full props for making the best apple pie (maybe best pie PERIOD) that he’d ever tasted.

 

Here is the recipe, exactly as I made it… Don’t ask me why I do crazy things like preheat to a hotter temp than I bake at or why I add an extra pinch of cinnamon… it just WORKED. :)

 

LORD OF THE PIES: One Apple Pie to Rule Them All

Total time: 1 hour 45 mins
Serves: That depends on how many people you want to share your epic pie with.
An apple pie with a sweet filling and a buttery streusel topping.
Ingredients
  • 1 refrigerated pie crust at room temperature for 15-20 minutes
  • For Filling
  • 3-4 large granny smith apples
  • 2/3 c sugar
  • 1 1/2 Tbs all purpose flour
  • 1 1/2 tsp ground cinnamon
  • For Streusel
  • 1 1/4 c all purpose flour
  • 1/3 c light brown sugar
  • 1/3 c sugar
  • 1 stick melted butter
Instructions
  1. Preheat oven to 375 degrees.
  2. Press pie crust into pie plate ensuring good contact with the corners. Crimp the edges if you’re fancy.
  3. Slice peeled and cored apples thinly into large bowl.
  4. Add the 2/3 c sugar, 1 1/2 Tbs flour, and 1 1/2 tsp of cinnamon to the apples. Throw in an extra pinch of cinnamon, because cinnamon is awesome.
  5. Stir the apples and dry ingredients together and let them sit. As the sugars start to melt stir a few more times.
  6. In a separate bowl combine dry ingredients for streusel and use a fork to break up any clumps.
  7. Pour the melted butter, a small drizzle at a time into the dry mix of streusel ingredients combining it with a fork. The mixture will look clumpy and bumpy, but clumps should be pea sized or smaller.
  8. Give the apples another stir and pour them into the prepared pie crust. Arrange the apples so they are neatly filling the pan, with a small mound at the center.
  9. Top the apples with the streusel mixture. It will be a LOT of streusel, but the butter, sugar, and flour will make your pie taste like magic, so don’t fight it.
  10. REDUCE OVEN TEMP TO 340 DEGREES.
  11. Place pie in the oven, and bake uncovered for 35 minutes.
  12. Cover with foil and bake for another 8 minutes.
  13. Use a knife and insert it at the center of the pie, listen for the sound. The apples should have a tiny bit of crunch left, but should be mostly soft.
  14. If they’re not ready, add another 8 minutes. Continue this pattern until the pie is done.
  15. The foil should keep the crust from browning too darkly, but the streusel should be golden.
  16. Let sit completely untouched by your greedy, pie hungry hands for at least an hour.
  17. Cut pie into meaningless wedges, because you’re not actually only going to eat one serving anyway.
Notes

Don’t forget to turn the oven temperature down before baking. I waited about an hour and 20 minutes before cutting mine, and it was still perfectly warm and delicious inside. I’m convinced the waiting made a big difference in the final result.

It’s Life Well Lived WEDNESDAY!!

 

This has been a VERY good week. Smile I have so much to be happy about, and so much to be grateful for… I hope you feel the same way when you look in on your own life. Even when things don’t go according to plan… things are good.

 

Again, I have several folks who have told me they’re drafting LWL lists to share with you, but none ready for this week… (PLEASE keep writing, and sending me some goodies) So, you’re stuck with more of some of my favorite life moments.

Why is this on the list?? Because once upon a time, I learned something about myself.

 

I GET EXCITED! I get invested! I get tunnel vision! I get obsessed and preoccupied and focused and CRAZY about things.

 

It’s just who I am.

And I let other people keep me down, and try to temper my exuberance for a long time.

 

And one day, I decided they could suck it. And that my excitement is as much a part of me as my eyes or hands.

 

I’ve rolled my own sushi

It wasn’t necessarily pretty, but there’s something really cool about having all of these random and foreign ingredients and putting them together.

 

I’m a lousy cook… and my friends made all of the sticky rice and such, but I think everyone should make their own food… and not just the basic stuff, but really out of the box exciting and difficult stuff sometimes! (think crème brulee or fancy tarts or something)

 

I stepped back from the table and thought, WOW, I just made sushi. I didn’t need to go spend tons of money on it… I did it myself. (and I did it with great friends, like Nicci, Trinity, and K) Such a good memory.

I’ve eaten a FRESH New York bagel with GOBS of full fat crème cheese

 

Some things have to be tasted in their elements to be truly appreciated. (Parisian street corner crepe being another good example) and I highly recommend that if you like bagels… even a little, make sure that no amount of calorie counting, or dieting will keep you from trying something as classic as an authentic bagel and schmear.

Okay… I definitely consider myself a foodie. I love perfectly prepared scallops, roasted root vegetables, fresh crusty bread with SHARP red leicester cheese, and perfectly creamy and toasty crème brûlée. I also, as you probably know if you’ve been reading my blog for long, am not afraid of a little fast food. I know that most of it is crap, sub-par-food-like-product, but I like my fries and $.89 tacos as much as the next girl.

So, after today’s long and tiresome happenings, fast food comfort was on the menu for Daron and I tonight. We tossed around the “regulars” considering burgers and burritos, finally conceding to something that was close and painless. Just before leaving the house, I said… “Isn’t that new place… Del… um? Del Taco open?” We thought we’d seen the lights on throughout the week, and set out to give it a try. In another happy bit of serendipity, we decided to enter the dining room, to give the new spot the benefit of fresh out of the microwave warmth. (HA!)

Upon approaching the building, we saw loads of team members at the door, balloons, and visitors smiling inside. It was quickly made clear to us, however, that tonight’s crowd consisted of invited community members only, with special meal passes and that the restaurant wouldn’t open until next Wednesday, November 17th.

Before we could scuttle off, we were stopped by Mr. Pope, who, noticing our excited faces, (and possibly hearing our grumbling bellies) humbly invited us in. He, upon learning that we’d never been to a Del Taco before, told us that tonight, as part of this special-invitation-only community event, they would be happy to buy us dinner as if we were among the invited guests. He guided us through the menu, explaining to us some of the things that make Del Taco “different”.

Freshly shredded cheddar cheese straight off giant blocks of the sharp stuff, crisp lettuce and tomato, slow-cooked (four hours per batch!) beans, in house grilled chicken, and the ABSENCE of a microwave were among the selling points. We were certainly skeptical, but excited. It was fast food after all, it can’t be THAT good. The hospitality was surprising, however, and I’m a sucker for great service (and trying new things) so with a smile, we ordered.

As the restaurant was using tonight as a training opportunity, the kitchen was fully stocked (read: PACKED) with employees, resulting in our receipt of food within just a few minutes.

Del Taco

I was truly surprised. My crispy chicken taco was filled with well seasoned, spicy, grilled chicken topped with their “secret” sauce (some sort of spicy sour cream sauce, maybe?), lettuce (CRISP!) and cheese.

 

It was HELLA good. Surprisingly good. Interestingly good. REFRESHINGLY good. The star of my combo burrito was certainly the beans and mound of sharp cheddar cheese (sans that obnoxious powdery coating that you find on packaged shredded cheese and in other taco joints). In fact, the ground beef wasn’t terribly exciting, and I probably wouldn’t go out of my way to order something touting the ground beef next time… Why would I? With that chicken on the menu (and steak, if that’s your thing) I’ll probably just stick with the bird. It was that GOOD.

Right around that time, smiling team members were walking through the dining room, passing out desert samples, and before I could blink, I was looking down at a caramel cheesecake bite and a small cup of a chocolate shake. The shake was good… at least as good as any other fast food shake I’ve had, but the cheesecake bites, WOW.

These little suckers are TROUBLE. Cheesecake and caramel wrapped (and fried… OF COURSE) and I’m not even kidding you, they were SO good. I nearly finished one, but couldn’t, which isn’t entirely bad, as one of those buggers has about 215 calories.

 

The atmosphere is good, and I firmly believe that one of the reasons Denton was chosen as the site of the FIRST Del Taco in Texas, is because of the Denton, TX vibe. Laid back people who are creative and kind populate this area. We love music and tech too. This place would benefit greatly from an online presence. Get this location its own facebook fan page, and a DentonDelTaco twitter account and give those Del Taco heads from all over the state (and beyond) who’ve pledged to drive across state lines for a taco a place to go and gush. That would be awesome. :)

 

Frankly, Daron and I just sat there, smiling, laughing, eating, and talking. We listed all of the places around town we’d grabbed a burrito on the go, and one after the other, our Del Taco experience knocked them down.

We literally said that there wouldn’t be a need for us to head to the “border” EVER again.

Listen, I like to keep things real on my blog. This is not HEALTH food. It should be consumed in moderation, like most fast food. The calorie, saturated fat, and sodium counts are probably exactly what you’d expect. That being said, most of us still eat fast food sometimes… Considering flavor, variety, creativity, and service, they’ve got a new customer in their throngs for SURE.

 

I fully understand what all my Cali friends have been yammering about. Del Taco is pretty freaking epic. :)

Friday in Austin!

We woke and went to our continental breakfast, which was NOT as exciting as the first day… the fruit selection was WAY limited (only pineapple, and honey dew by the time I got there) and the main course was a ham and cheese croissant, which was yummy, but not “light” in anyway. Not to mention that ham is such an loaded choice, I mean, there are a lot of groups who won’t eat pig… just my thought.

Anyway, after breakfast, we did our session thing, I attended a particularly FASCINATING session by the FAB Paula Kluth, about Autism, and how to be more accommodating to individuals on the spectrum, in and out of the classroom. :) It was a TEN in my book.

We hit up Fresh Choice for lunch for some much needed green. I really don’t like salads, and the veggies were all raw, and not what I was looking for, so a little salad, a 1/2 cup serving of lentil soup, most of a tiny ‘tato, and cornbread(!) was delish.

After conference festivities were completed for the day, we decided to hit the pool again before getting ready for dinner. Lindsay and I were going to have dinner together, while Laura met up with an old friend, so we swam, showered, and got ready for the night.

Lindsay and I went to Baby A’s or Baby Acapulco’s, which was another great Mexican food spot. I got my usual, and it was very, very good, but my favorite was still el marcado’s. :D

At this point, we’ve missed a history making 12”+ of snow in our home town, and were pretty darn grumpy. We really wanted to be home with our family, and morning and the ride home were looking pretty promising. :D

We decided NOT to set the alarm in the  morning, but to wake when we woke, dress, pack, and hit the road. We checked out of the hotel at around 9:30-9:45, and made our way to 620 cafe and bakery in Round Rock. It was pretty adorable, but I have to admit. OUT OF CONTROL portions…

Anyway, we drove through the snow as we headed north, but by the time we got home, so, so much of the record breaking snow was melted. :(

I was overwhelmingly glad to be home. I love traveling, but I missed Daron, and my cats, and I really hated to miss the snow. :(

All in all, only a meeting with MizFit would have made the trip better, it was a blast. :D

Hey guys, I left you last after my continental breakfast at the hotel on Thursday morning… After that, my counterparts and I did our conference thing, but you don’t want to hear about that, you want to know about the fun, Austin stuff!

We went to a place called Hot Boiled, which is a Cajun/Creole/Vietnamese fusion restaurant. It was very small, and in a shopping center, but we were pretty happy with the food, I’d say. We started with grilled chicken springrolls with a traditional peanut sauce.

Cut into 6 pieces, we managed to have yummy noms while waiting for the rest of our food. :) I got a vegetarian rice noodle lo mein with broccoli and celery. It was SO much food, I felt like I ate, and ate, and ate, and there was still a whole plate left over.

After some more conferencing, we decided we needed to make an EMERGENCY BATHING SUIT RUN, and hit the pool. We soaked in the hot tub for a while and then, I realized I had an untapped resource with me!

Laura was a swimmer and swim instructor in high school and college! And as someone who thinks a sprint distance tri might be fun to do at some point, I should learn how to properly swim.

Needless to say, swimming is an art, and one that I had NO idea how to do properly. We ended up at the side of the pool on the steps, because I need to back up THAT far. I mean, I can float and waggle my body parts to propel myself through the water, but a true freestyle stroke, with the right head turns, and actually BREATHING, is definitely hard. :)

I pretty much spent as much time LAUGHING as I did trying to swim. haha.

After that, we went to the most AMAZING burger place I’ve ever been to, Elevation Burger in Austin on Arboretum BLVD was unreal. We had organic grassfed beef burgers, fries cooked in olive oil, (and most of a hand spun, to-die-for chocolate shake) :)

One of those amazing chances to splurge while still making a few small choices that improve the experience. It isn’t health food, it isn’t even particularly healthy at all!! It could be worse, much worse… but it could NOT have TASTED better, I assure you. I had a burger with ketchup, mustard, cheese, caramelized onions, and pickle. HOLY YUM.
